Are you passionate about food and the art of cooking? Commis chefs and prospective students wishing to train to the highest standard will thrive on this programme. The NVQ 2 Diploma In Professional Cookery is offered at our state of the art training facility at Hospitality House where you will train alongside fellow professionals from London and the home counties.
It is essential that you are employed in the industry or willing to commit to a placement in a professional kitchen. Applicants should have passed either the VRQ or NVQ Level 1 Professional Cookery qualification. For those not holding the above qualification 6 months experience as commis chef, cook or kitchen porter is essential.
The City And Guilds Diploma covers 14 units of study. Three compulsory theoretical units cover effective teamwork, hygiene and the maintenance of health and safety. Compulsory cookery units include fish, meat, poultry and vegetable preparation. Optional units of study include pasta, sauces, soups, rice, hot and cold desserts
Your chef tutor will demonstrate the skills required to be competent in each unit. After practice, you will then be assessed while preparing and cooking menus for corporate hospitality packages. You will also be assessed in your workplace. For each unit you will need to take a multiple choice theory test.
